Following the spirit of challenge, intuition & courage of papà Celso, in 2007-2008 Abonna began producing the Metodo Classico wines, cultivated on the hills of Dogliani. The rows of Pinot Nero & Chardonnay span over twenty years of our company. The grapes we obtain give us the concentration needed to make a fresh, aromatic Metodo Classico.

Color: delicate straw yellow

Nose: yeast, hazelnuts

Flavor/Finish: fresh & elegant, with notes of yeast & hazelnuts, with a pleasing acidity  

Varietal: Chardonnay, Pinot Nero

Food Pairing: aperitifs, fish-based dishes, salumi, vegetable flan, white meat  

Process:  soft pressing, static clarification, 1st fermentation 10 days, racking & aging for several months, 2nd fermentation in bottle & aged on lees for 30 months  

Serving Temperature: 40 - 41 °F

Alcohol: 12.5% 

Residual Sugar: 4.5 g/L
