There are two main beliefs as to the origins of the name, “pecorino.” The first is “gourmet sheep,” as shepherds’ sheep flocked to the sweet bunchess of this grape during their yearly “transumanza” migration. Another hypothesis is that the shape of the pecorino grape bunches mimics that of a sheep’s head, with its elongated shape & two lateral offshoots.

Nose: mixture of broom & white flowers

Flavor/Finish: fresh to the palate, but strongly structured; honeysuckle & Asian pear, backed with pleasant minerality

Varietal: 100% Pecorino

Food Pairing: raw seafood, fish dishes, light sauces

Process: cold pressed refinement

Serving Temperature: 45 - 50 °F

Alcohol: 13%
