Food Pairing: smoked salmon, buffalo mozzarella or a fish stew.

Process: soft pressing occurs at a temperature between 50-53°F. The first fermentation is in thermocontrolled tanks, with a temperature of 59-64°F. In May the wine then undergoes second fermentation using its own yeasts. 84months on the lees
