Color: A deep yellow, definitively golden.

Nose: complex layers, mature ripe fruit and fresh pastries. Exotic fruit, ripe pineapple, peaches in syrup and sweet spices

Flavor/Finish: round, creamy, with consistent bubbles and strong notes of fresh pastries. Fine, fruity and persistence with recognizable minerality

Varietal: 100% Durella

Food Pairing: scallop risotto or sea bass made with a fried potato. A provocative combination is with Chantilly cream puffs

Process: soft pressing occurs at 50-53°F. The first fermentation takes place in thermo-controlled tanks at 59-64°F.In April the wine undergoes second fermentation using its own yeasts. 84 months on the lees.

Serving Temperature: 39- 43 °F
