This is a label which combines the qualities of Carricante & Catarratto, two vines that are symbolic of Etna’s viticultural tradition. The terroir is different from the rest of Sicily, with cold winters & less intense sunlight. The grapes have slower ripening times & take on their fragrant aromas in a more linear way. Freshness & fragrance distinguish this wine, together with its persistent tangy taste.
Color: clear straw yellow with greenish shades
Nose: powerful, with distinct hints of mimosa & broom, exalting fruity aromas of white peach & ripe pear
Flavor/Finish: great breadth; full & rich in texture, with a lingering saltiness; lasting freshness & fragrance fill the mouth, creating a unique experience
Varietal: Carricante, Catarratto
Food Pairing: a range of vegetarian & fish dishes, seafood pasta, light chicken dishes
Process: hand-picked, soft pressing & fermentation at controlled temps; 3 months “sur lie” on fine lees in stainless steel tanks; 6 months bottle maturation
