Thanks to the continuous research & experimentation of the Domìni Veneti winemakers, Ripasso “La Casetta” is produced by re-fermenting fresh Valpolicella wine with Recioto skins, giving rise to an absolutely original wine of unparalleled softness & complexity.
Color: strong ruby red, with hints of violet
Nose: complex aromas of black cherry, violets & spice
Flavor/Finish: notes of black fruits, spice & tobacco; well-balanced & full-bodied, with velvet-smooth & harmonious tannings
Varietal: 65% Corvina, 15% Corvinone, 10% Rondinella, 10% DOCG varietals
Food Pairing: grilled & braised meats, game, aged cheeses
Process: hand-picked, dried for 120 days, destemmed & gently crushed; fermentation, then 12 days maceration; full malolactic fermentation; held in steel, then pased through recioto skins for 15 days; aged in oak, steel, then bottle
