Ravera is Novello’s most famous cru, located on the eastern slope of the township of Novello. The white calcareous marl soil, together with the historical importance of the cru & its excellent southern exposition, make this land one of the best areas for cultivating nebbiolo destined to become Barolo.
Color: intense garnet red with orange reflections
Nose: clear, subtle & delicate, with ripe red fruit, withered flowers & slightly spicy notes
Flavor/Finish: red fruits, vanilla & spices; rolls on the palate strong & vigorous, but the beginning is sweet & the finish soft, due to soft tannins
Varietal: 100% Nebbiolo
Food Pairing: risotto, roasted & grilled meats, mature cheese
Process: aged in 500 L barrels for 9 months, then 50 hectoliter barrels for 21 months; assemblage, then rested in bottle for 15 months
