Governo is an ancient winemaking technique supposedly invented in the 14th century in Toscana. Designed to help ensure good fermentation & consistent wine, a small parcel of harvested grapes are reserved & partially dried out, which are then added to the “must,” if the original fermentation slows.
Color: red, with slight shades of burgundy
Nose: full, sweet & fruity, with hints of earthy minerals & touches of chocolate
Flavor/Finish: medium structure, with balanced acidity; full fruit flavors, with a long lasting aftertaste of leather & spice
Varietal: 100% Sangiovese
Food Pairing: white & red meat dishes, mushrooms, dry cheese
Process: fermentation in steel tanks, aged in oak barrels; bottle aged at least 6 months
Serving Temperature: 64 - 66 °F
Alcohol: 13.5%

The wine pays homage to an ancestral technique, as it recalls the “Governo” method of ancient Toscana. In doing so, this wine exhibits the authenticity of the grapes & our traditional winemaking practices.
